Wild Rice Soup

Wild Rice, Cooked
1 Cup
Water
1 1/3 Cups
Chicken Stock
1 Cup
Half and Half
1/3 Cup
Slivered Almonds
1/4 Cup
Parsley, Minced
To cook wild rice:
1) Wash 3/4 cup of wild rice in a strainer. Add rice and 1/2 tsp. salt to 1 3/4 cups water. Bring to a boil, stirring occasionally. Reduce heat, cover and simmer until tender (40 to 50 minutes). After 30 minutes, check to make sure rice is not sticking to the pot (add more water, if necessary).
To make soup:
1) Saute celery, carrot, onion and green pepper in the butter in a large (3 quart) saucepan until the celery is tender (about 5 minutes).
2) Stir in the flour, salt and pepper. Stir in the water, stock and wild rice. Heat to boiling, then reduce heat.
3) Cover and simmer for 15 minutes, stirring occasionally.
4) Stir in half and half, almonds and parsley. Heat until hot but do NOT boil.
