Baked Salmon with Sour Cream Stuffing

Celery,Chopped -- SC Stuffing
1/2 Cup
Onion,Chopped -- SC Stuffing
1/4 Cup
Melted Butter or Oil -- SC Stuffing
1 Liter
Bread Crumbs (1 quart) -- SC Stuffing
1 Teaspoon
Salt -- SC Stuffing
1/2 Cup
Sour Cream -- SC Stuffing
1/4 Cup
Lemon,Peeled and Diced -- SC Stuffing
2 Tablespoons
Lemon Rind (Optional) -- SC Stuffing
1 Teaspoon
Paprika -- SC Stuffing
1) Thaw frozen salmon. Clean, wash and dry the fish. Sprinkle inside and out with salt.
2) Prepare stuffing: Cook celery and onion in fat until tender. Combine all ingredients and mix thoroughly.
3) Stuff fish loosely. Close opening with small skewers or toothpicks.
4) Place fish in a well-greased baking pan. Brush with fat.
5) Bake at 180° C (350° F) for approximately 1 hour or until fish flakes easily when tested with a fork (be sure to baste fish occasionally with fat during the cooking period).
6) Remove skewers and serve.
