Aubergines in Fragrant Sauce

Aubergines -- (8 ounces)
100 Grams
Pork Filet -- (4 ounces)

Ginger
1 Clove
Garlic
400 Milliliters
Oil -- (1 3/4 cups)
1 Tablespoon
Sherry
2 Teaspoons
Chili Puree
2 Tablespoons
Cornflour
1 Tablespoon
Soy Sauce
1) Peel the aubergines and cut into strips about the size of potato chips.
2) Cut the pork into thin shreds the size of matchsticks.
3) Finely chop the spring onions, the ginger and the garlic.
4) Heat the oil in a wok and deep-fry the aubergine for about 1 to 2 minutes. Remove with a slotted spoon and drain.
5) Pour off all but 1 Tablespoon of the oil. Quickly stir-fry the onions, ginger and garlic, followed by the pork.
6) Add the soy sauce, sherry and chili puree and blend well. Add the aubergine and cook for 1-2 minutes.
7) Combine the cornflour with a little water and pour into the pan. Stir a few times until the juice thickens and serve hot.
