Apples,Granny Smith (tart) -- Pared & quartered
3 Tablespoons
Butter
10 Inch
Pastry for two-crust pie -- (see recipe)
Milk
1) Mix sugar, flour, nutmeg, cinnamon and salt together in a bowl large enough to hold the apples. Stir in the sliced apples and mix well.
2) Heat oven to 220° C (425° F).
3) Prepare pastry.
4) Line pie plate with 1/2 of the pastry. Use a fork to press holes over the bottom of the crust.
5) Turn apple mixture into pastry-lined plate and dot with the butter.
6) Cover with other 1/2 of the pastry and seal. Brush pastry with milk and use a fork to make holes in the pastry to allow steam to escape during cooking.
7) Bake until juice begins to bubble through holes in the
crust (40 to 50 minutes). This is really important! If the
juice doesn't bubble through, the apples aren't cooked enough and the pie
doesn't taste right!

NOTES : If crust seems to be getting too brown, place a piece of aluminum foil over it.
